Chicken Casserole

If you are like me, you are constantly trying to think of something new to eat for dinner.  I've looked at many recipe websites, but am always hesitant to make something when I don't really know if it will be good or not.  So, I thought I'd share one recipe that is a favorite around our house- chicken casserole.  It takes just a bit of prep and then 30 minutes in the oven and it's done!  Great by it's own or with a side veggie or rolls.

What you'll need:

  • Chicken, of course! :)  One pack will do.  I like the chicken tenderloins or chicken cutlets because it makes it easier to cook.
  • Fettucine noodles- about 8-10 oz.
  • 1-2 cans of cream of chicken soup  I like the chicken with herbs- just gives it a little more flavor.  
  • 4 oz. sour cream
  • 1-2 sleeves Ritz crackers
  • 1 stick of butter
In a pan, heat oil on medium heat.  I like to season the chicken with some salt and pepper before cooking. Then completely cook the chicken in the oil.  Once cooked, cut up into pieces.  I like to cut it up pretty small so that they are bite size so you will only need a fork to eat with.  While the chicken is cooking, I also cook the noodles (I break them in half before adding to the boiling water).  Drain noodles.  Then in a 9x13 baking dish, mix the sour cream with the cream of chicken soup.  If I buy a larger pack of chicken I'll use 2 cans of the cream of chicken and a tad more noodles.  You don't want it to be too dry.  I also add some salt and pepper.  Then add the noodles to the mixture.  Crumble the ritz crackers on top.  I love the crackers so I use 2 sleeves but the recipe only calls for 1.  Then melt a stick of butter and drizzle over the crackers.  Bake on 350 for 30 minutes and you're done!!

Once you've cooked it several times, it will take you about 30 minutes max to get it ready for the oven.  I would think it could be something you could prepare ahead of time so that you could just take it straight from the fridge to the oven on a week night (I just wouldn't drizzle the butter on top in advance or you might have soggy crackers).  If you try it, I hope you enjoy!!
